That changed when Falcon launched the Eloma brand combi-ovens. Eloma is one of the world’s top combi-oven manufacturers, built in Germany. Their portfolio features some of the most advanced models available.
This includes the range topping Genius Touch which features computerised controls, perfect for high volume work. The Multimax has a traditional mix of computer and manual controls. The model that has really turned heads is the mini-combi - Joker. The first table-top oven which supports the features of much larger ovens at a much reduced price. We consider the Eloma Joker as a perfect fit for pubs and food outlets with a small to medium volume of sales.
The Joker has six 2/3 gastronorm oven racks. The small footprint means this is the perfect fit for any kitchens where space is at a premium. Cooking modes include steam only, dry heat only or a mix of dry heat and steam. Size-wise, the oven is deceptive and can cook six chickens or a joint of meat up to 15kg.
Energy conservation is also an important factor. Using a direct steam injection system, the Joker only heats up enough water for the cooking cycle.
With licensing hours being extended across England and Wales, more and more pubs are introducing late night food to customers. Offering the choice to stay on the the premises rather than leave to visit the nearest fast food shop.
Joker is the ideal piece of equipment to capitalise on this new prospective market. Pizza, always a favourite for late night revellers is an example. These ovens can easily bake 6 at a time in just a matter of minutes. Provision of quick, quality fast food adding profit to the bottom line is no joke though.
